Compiti principali:

Il tirocinante sarà inserito nel reparto Kitchen e avrà modo di avere uno sguardo completo sulla gestione del reparto svolgendo le seguenti attività:

  1. Menù engineering;

  2. Analisi e valutazione dei food cost;

  3. Elaborazione dei turni settimanali dei reparti cucina e stewarding;

  4. Gestione del personale della cucina (coordinamento mansioni del reparto e gestione ferie dipendenti);

  5. Gestione della corrispondenza del reparto e degli impegni dello chef;

  6. Attività di selezione dei candidati per il reparto cucina in collaborazione con le Risorse Umane;

  7. Supporto allo chef nei colloqui di lavoro;

  8. Supporto all’ufficio Risorse Umane nell’organizzazione delle attività formative;

  9. Creazione e implementazione di un sistema di database per i dipendenti della cucina.

Nell’arco di questa esperienza di tirocinio, il trainee riuscirà ad acquisire competenze diversificate. Imparerà ad essere pro-attivo, veloce e tempestivo nel rispondere alle varie esigenze del reparto, risolvendo eventualmente esigenze dell’ultimo minuto. Maturerà competenze organizzative e di problem-solving.
